Hard work is the key for Leon

Veronica Leon, who came to Quincy 20 years ago, is the Akins Deli manager.

Veronica Leon first came to Quincy 20 years ago when her father got a job with Simplot. She was just 15 years old when she stepped through the doors of Quincy High School the first time.

“There was only one teacher who was bilingual, Mr. Bazaldua. He went on to become principal at Monument Elementary,” said Leon.

After graduation, she met her husband while working at Simplot in 1995.

These days, her husband is working in construction, and she keeps busy working as the deli manager at Akins Harvest Foods while raising their two children, Eric and Isabel. Leon’s road to success has been paved with hard work and dedication. In little over a year, she went from working in the deli to managing both the deli and pizzeria.

“I showed up for work and worked hard. I made myself available for extra shifts day or night. If you want something, you have to work hard at it,” said Leon.

She is also known for her homemade salsa and pico de gallo, which is sold in the deli. “I have given out the recipe, but people come back and tell me it’s not the same. It’s probably because I don’t measure the ingredients,” said Leon.

Her pico de gallo started selling at the rate of one batch a day. Now the deli makes two batches a day to keep up with the demand and sometimes has to make more. Leon’s favorite part of her job is walking around the store and meeting new people.

“It is a friendly community. It is also a small town, but there are a lot of jobs. If you have a job, work hard to keep it. There are a lot of people who need a job,” she said.

In her free time, she enjoys swimming, camping, and watching movies with her family. Leon is thankful for the opportunities Akins has given her.
